Ashley's Weekly Menu

I had quite a few leftover meals from my two months of making monthly menus so no new recipes this week:

Tacos
Tater Tot Casserole
Crockpot Steak
Chicken and Dumplings
Spaghetti

Pinwheels

  • 1 pkg cream cheese
  • 1/2 small can chopped black olives
  • 1 small can of green chilis
  • tortilla shells
-Mix cream cheese, olives, & green chilis togeth until well blended. Spread on tortilla & roll tortilla.
-Put tortillas in refrigerator covered for at least 2 hours.
-Cut tortillas into pinwheels.
-Serve with salsa.

Chocolate Butterscotch Bars

  • 2 1/4 C all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 C packed brown sugar
  • 1/2 C semi sweet chocolate chips
  • 1/2 C butterscotch chips
  • 1/4 C milk choc chips
  • 1 C (2 sticks) unsalted butter
  • 2 large eggs
-Preheat oven to 350. Coat 15X10 in pan with non stick cooking spray.
-Beau butter in large bowl until light & fluffy. Add eggs; mix til well blended. Add dry ingredients; mix by hand only until ing are mixed well. Spread ing evenly into pan
-Bake 25-30 minutes or until edges are lightly browned & toothpick comes out clean. Cool 20 minutes in pan. Cut into squares.

Green Bean Casserole

  • 2 cans cut green beans, drained
  • 3/4 C milk
  • 1 10oz can of cream of mushroom
  • 1 (2.8 oz) can french fried onions
  • salt & pepper to taste
-Preheat oven to 350
-In med casserole dish mix milk, green beans, cream of mushroom soup, & 1/2 can of onions.
-Bake 25 min in preheated oven until heated through & bubbly.
-Sprinkle remaining onions over the top & return to oven for 5 minutes.
-Season with salt & pepper to taste.

Butterscotch Cookies

We love these!
  • 2 1/4 C flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 C crisco (butter flavored)
  • 3/4 C sugar
  • 3/4 C brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 C butterscotch chips
  • 1 C nuts (optional)
~Cream crisco, add sugar, eggs & vanilla.
~Add the rest of the ingredients. chips last
~Drop by spoonfuls to cookie sheet.
~Bake at 375 for 9-11 minutes.

Ultimate White Chippers

  • 1 1/4 all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 C packed brown sugar
  • 1/4 C sugar
  • 1 C white chocolate chips
  • 3/4 C coarsley chopped pecans
  • 1/2 C (1 stick) butter
  • 1 egg
  • 1 tsp vanilla
  1. Pre-heat over to 375
  2. Beat butter in large bowl until smooth. Beau in egg & vanilla til blended. Add dry ingredients until well blended.
  3. Drop dough by teaspoons 2 in apart onto ungreased cookie sheet. Bake 8-10 minutes or until edges are golden brown. Cool 2 minutes on cookie sheets.

Apple Raisin Muffins

  • 1 1/2 C all-purpose flour
  • 1 tbls baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/8 tsp ground ginger
  • 2/3 C packed brown sugar
  • 1 C chopped dried apples
  • 1/2 C old fashioned oats
  • 1/2 C chopped walnuts
  • 1/2 C raisins
  • 1/2 C milk
  • 1/2 (1 stick) butter (melted)
  • 2 eggs
  1. preheat oven to 400.  Spray muffin pan with non stick spray.
  2. Combine milk, butter, & eggs in small bown until blended. Add to dry ing. Pour batter evenly into muffin pan.
  3. Bake 15-17 min. Cool 5 minutes in pan.
