Ashley's Weekly Menu

My Weekly Menu-For Week of May 1st-May 7th:


  •  Sour Cream Chicken Enchiladas, Rice, Corn-I'm going to make 2 batches of this and freeze one for later to save some time (and my husband from washing the dishes) for another week!  :)


  • Breakfast for Dinner!!  Pancakes, Eggs, and Blueberries

  • Homemade Pizza for Pizza and movie night, Salad, probably peas and a fruit for boys! (We are tired of the frozen pizza so I'm going to try and make my own!)

  • Leftovers and Dinner with Parents will be on the menu too!

Easy Crescent Taco Bake

  • 1 can crescent rolls
  • 1 lb ground beef
  • 3/4 C salsa
  • 2 tbls taco seasoning
  • 1 C shredded cheese
  • lettuce as desired
  • tomatoes as desired
  1. Heat oven to 375. Unroll dough; seperate into 8 triangles. Place in ungreased 9 in square pan or 10 in pie plate. Press over bottom & up sides to form crust.
  2. In 10 in skillet, cook beef over med heat. Drain. Stir in salsa & taco seasoning mix; simmer 5 min. Spoon meat mixture into crust. Sprinkle with cheese.
  3. Bake 20-25 min or till crust in golden brown & cheese is melted. Serve topped with lettuce & tomatoe.

Better Than Sex Dessert



  • 1 C chopped pecans (I accidently used 1/2 C & it worked great!)
  • 1 stick butter
  • 1 C flour
  • 1 C powder sugar
  • 1 container of cool whip
  • 1-8 oz package cream cheese, softned
  • 1pkg vanilla instant pudding
  • 1 package chocolate instant pudding
  • 2 C milk
  • 1 Heath bar
  1. Mix together pecans, butter, & flour. Press in ungreased 13X9 glass pan. Bake at 350 for 20 minutes. Cool.
  2. Mix together powder sugar, 1 C cool whip, & cream cheese. Spread on cool crust.
  3. Beat together puddings & milk & spread on creamy layer.
  4. Cover top with remaining cool whip. Sprinkle with Heath bar.

Banana Cake

This recipe is from the Duggar Family Website!



Ingredients:
1 Box Yellow Cake Mix
2 Boxes Vanilla Pudding Mix
5 Bananas

Directions:
Prepare cake mix and pudding as directed on boxes. After baking cake, spread pudding on top. Slice bananas and add to top!

** This recipe was super yummy as is, but next time I want to try it with chocolate pudding mix on the top and maybe add some crushed vanilla wafers to it too! Once I try it, I'll post pictures of it that way too and let you know how it was! :) **

My Menu Plan for Week of: April 24th-April 30th

I actually do have somewhat of an idea of what nights we will be eating what this week!

Saturday-Eating with Friends

Sunday-Becky's Mexican Recipe (I'm gonna serve it over noodles-I'll add pictures after I make it)

Monday-Eating with Parents

Tuesday-Leftovers (I'm going to put the leftover Mexican recipe from Sunday on tacos with rice)

Wednesday-Philly Cheesesteak Sandwiches, Carrots, Green Beans (This is from last week-I didn't get to it)

Thursday-Chicken Fettucini Alfredo (easy version-Leftover rotisserie chicken from last week that I had put in freezer, Fettucini noodles, store bought Alfredo sauce, with Tony Chachere's seasoning), served with salad, homemade rolls, and Beets for boys (I won't go near the things!) :)

Friday-Frozen Pizza for Pizza and Movie Night

For Dessert this week I am going to make Banana Cake. I will post pictures and recipe after I've made it if it is good! :)

Cheesy Chicken & Rice Casserole


  • 1 can of cream of chicken
  • 1 & 1/3 C water
  • 3/4 C uncooked white rice
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 2 C frozen mixed veggies
  • 4 skinless boneless chicken breast half (1 pound)
  • 1/2 C shredded cheese
  1. Heat oven to 375
  2. Stir soup, water, rice, onion power, black pepper, & veggies in a 2 qt baking dish.
  3. Top with chicken. Cover dish.
  4. Bake 50 minutes or till chicken is cooked & rice is tender.
  5. Top with cheese. Let stand 10 min.
  6. Stir rice before serving.

Taco Bake


  • 1 pkg delux mac & cheese dinner
  • 1lb ground beef
  • 1 pkg (1&1/4 oz) taco seasoning
  • 3/4 C water
  • 3/4 C sour cream
  • 1&1/2 C shredded cheese divided
  • 1 C salsa
  1. Heat oven to 400.
  2. Prepare dinner mix as directed on package.
  3. While mac & cheese is still cooking brown meat & drain. Add taco seasoning mix & water. Simmer 5 minutes.
  4. Stir sour cream into prepared dinner. Spoon half of the dinner mixture into 8 in baking pan. Top with layers of meat mixture 1 C of cheese & remaining dinner mixture. Cover
  5. Bake 15 minutes top with salsa & remaining 1/2 C cheese. bake uncovered an additional 5 minutes or till cheese is melted.

Chocolate Chip Cookies


  • 1/2 C (1 stick) melted butter
  • 3/4 C packed dark brown sugar
  • 3/4 C sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 12 oz bag chocolate chips
  • 2&1/4 C all purpose flour
  • 3/4 tsp baking soda
  • 1 tsp of salt
  1. Pre heat oven to 375
  2. mix all ingredients together
  3. spoon dough onto baking sheet
  4. bake for 12-16 minutes (I bake mine for 12 minutes)

Beef Tips & Gravy

  • Beef tips
  • 1 pkg brown gravy
  • 1 onion ( I didn't use a whole onion b/c I don't like them) chopped small
  • 1 garlic (just used part of it) chopped small
  • egg noodles (I used about 8 oz, you can use more) (or you can use rice)
  • 3 tbls olive oil
  1. cook meat in a 4 in skillet in olive oil. Mix in onions & garlic.
  2. add 4 cups of water & let it set on medium for about 1 hour or 1 1/2 hour (you want the meat soft)
  3. boil noodles seperate until cooked.
  4. Serve beef tips over noodles or rice.

Crockpot White Chicken Chili

  • 2 lbs chicken breast
  • 1 48 oz jar northern beans
  • 1 16 oz jar salsa
  • 8 oz shredded montery jack cheese
  • 8 oz can of chicken broth

-throw ing in crockpot & cook on low 5-6 hours

-in bowl crunch tortilla chips add soup & more cheese

Puppy Chow

  • 1 Pkg choc chips
  • 1/4 C oil
  • 1/4 C peanut butter
  • 6 C chex cereal
  • 1 gal bag with 2 C powdered sugar
-melt choc chips with oil. add peanut butter stir until smooth. then add cereal.
-mix cereal mixture in bag of powdered sugar. shake gently. serve

Winter Spaghetti

Ingredients:
1 box of Kraft Tangy Italian spaghetti
1 lb ground beef
1/3c green bell pepper (optional)
1 can chopped black olives
8oz pkg mozzarella cheese
1 8oz pkg cream cheese
1small can chopped mushrooms
3 Tbs olive oil

Directions:
Preheat oven to 350. Boil noodles. Mix sauce according to box. Cook beef and add to sauce. Saute veggies. Add veggies to cream cheese and mix. In 9x13 pan, put nooodles on bottom, then cream cheese mix, then sauce, top with moz cheese. Cook until cheese melts.

Ashley's Menu for the Week

I'm not going to put which days I'm going to make each meal because I really don't plan that ahead of time. It will all depend what we are doing that day, how tired I am, etc. I usually just plan enough meals for the week and then we decide each day what we are having!

Week of 4/17-4/23

Barbeque Chicken Sandwiches, Potato Salad, and Grapes
(This is one of my easy go to busy mom meals-I buy a pre-cooked Rotisserie Chicken. Shred half of it/Freeze half of it for something else. Then I just mix the shredded chicken with BBQ sauce-we like Sweet Baby Ray's, and put it on a hamburger bun with some cheese!)

Breakfast Casserole

  • 1 lb sausage
  • 1 C bisquick
  • 2 C milk
  • 1/2 tsp oregano
  • salt & pepper

-Brown sausage, drain, mix all ing. together.

-Bake for 30 min @350 in greased 13X9 dish

Black Bottom Cupcakes

Ingredients:
3 cups flour
2t soda
2t vinegar
2 cups sugar
2t salt
2t vanilla
1/2 cup cocoa
2/3c oil
2 cup water.

Mix and fill papers 1/2 full with mixture.

Add:
6oz cream cheese
2/3 c sugar
2 beaten eggs
2 cup chocolate chips

Add l large spoonful to top of papers. Bake 20 minutes at 350.

3 Cheese Manicotti

Ingredients:
1 8oz can tomato sauce
1 envelope spaghetti sauce mix
2 c shredded mozerella
1 cup cream style cottage cheese
2 beaten eggs
1/2 t salt
1/8t pepper
8 manicotti shells, cooked
2 cups parmesan
1/4 c snipped parsley (optional)

Directions:
Blend tomato sauce, spaghetti sauce mix, 1 1/2 c water. Simmer, uncovered 10-12 minutes.
Meanwhile, combine 1 1/2-2 cups of mozzerealla, cottage, and parmesan cheeses. Add eggs, parsley, salt, and pepper; mix lightly.
Stuff manicotti with cheese mix using about 1/4c for each.

Pour 1/2 cup of sauce mix into 12x7 1/2x2 dish. Arrange manicotti in dish and pour remaining sauce on top. Sprinkle with remaining mozzerella. Bake uncovered at 350 until bubbly (25-30 minutes).

Sloppy Joes

Ingredients:
1 lb ground beef
1 cup ketchup
1 Tbs mustard
2 Tbs vinegar
2 Tbs sugar
salt and pepper to taste
1/4 cup water
(adjust ingredients as needed)

Directions:
Brown meat. Add remaining ingredients. Cook slowly for 20 minutes. Serve on toasted buns.

Cheese Fudge

Ingredients:
1 jar jalapeno pepper slices
1 lb cheddar cheese or more
1/2 c flour
2 eggs
1 can PET milk

Directions:
Grate cheese into baking pan. Mix flour, eggs, and PET milk. Pour mixture over top of cheese. Arrange as many peppers on top as you like. Bake at 350 for 30 minutes.

Mexican Casserole

Ingredients:
1lb ground beef or chicken
1 can enchilada sauce
1 can ranch style beans
shredded cheese
1 can rotel
1 can cream of chicken
Tortillas

Directions:
Brown meat. Pour enchilada sauce, a little pepper, and beans over meat. Mix rotel and cream of chicken in seperate bowl. Tear tortillas in casserole dish. Pour meat mix over, then rotel mix, then shredded cheese. Repeat. Bake at 350 uncovered until bubbly (15-30 minutes)

Zuccini Bake

Ingredients:
Fresh zuccini
salt, pepper
bacon
Butter
Bread Crumbs

Directions:
Boil zuccini until slightly tender. Cut in 1/2 long ways. Using fork, scrape down insdie center. Add salt, pepper, and butter. Sprinkle bread crumbs over top. Put raw bacon on each zuccini. Bake uncovered at 325 for 20 minutes or until bacon is brown.

Blonde Brownies

Ingredients:
1 yellow cake mix
2 eggs
1/2 cup oil
1/2 bag chocolate chips

Directions:
Mix ingredients together and add 1/2 bag of semisweet chocolate chips. Fold chips into mix. Press into 9x13 glass pan. Bake at 350 for 15-17 minutes.

No Bake Cookies

Ingredients:
2 cups sugar
1/4 cup cocoa
1/2 cup milk
1/4 cup butter

Mix together over heat until mixture boils. Then boil 1 minute. Remove and add:

2 cup oatmeal
1/2 cup peanut butter

Stir until peanut butter melts. Then drop by spoonfuls on wax paper.

Chocolate Gravy

Ingredients:
3/4 cup sugar
1/4 cup cocoa
1/4 cup flour
1/4 cup butter
1/8 t salt

Directions:
Mix together and heat slowly adding 2 cups milk. Cook until thick, stirring constantly. Serve over bisquits with eggs!

Sour Cream Chicken Enchiladas

Ingredients:
2cups cooked and diced chicken (3-4 breasts)
1/2 c diced onion (optional-I don't use it)
2 cans cream of chicken soup
8 oz sour cream
2-3 cups cheddar cheese
1 small can green chilies
10 flour tortillas

Directions:
Mix together diced chicken, onion, and cheese in a bowl. Mix together chicken soup, chiles, and sour cream in another bowl (sauce). Place a small amount of sauce in a tortilla and add chicken mix on top. Put in a greased pan with a little sauce on bottom. Cover enchiladas with leftover sauce and top with grated cheese. Bake at 350 for 20 minutes with foil and 10 minutes without foil.

Beef Skillet Taco Bake



  • Shredded fiesta cheese
  • 1 lb ground beef
  • 1 can tomatoe soup
  • 1 pkg taco seasoning
  • 1/2 C water
  • 1/2 C salsa
  • 6 flour tortillas cut into 1 in squares
  • 1 can of black beans (optional)
  • 1/2 C sour cream
  • 1 small can green chilis
  1. Brown meat & drain grease
  2. Add taco seasoning, soup, water, salsa, beans, tortillas, sour cream, & chlis. Stir till well blended
  3. Let it sit until it comes to a boil. Turn heat to low for 5 min. Add cheese & turn up heat till it melts.
This is really good & so easy!! It's one of my husbands favorite meals.

Chicken Macaroni Casserole

  • 1 1/2 c macaroni, uncooked
  • 1 c cheddar cheese, shredded
  • 1 1/2 c chicken or turkey, cooked
  • 4 oz mushrooms, drained
  • 1 can cream of mushroom soup
  • 1 c milk
  • 1/2 tsp salt
  • 1/2 tsp curry powder
  • 1 c peas, frozen


Heat oven to 350 degrees. Stir together all ingredients; pour into an ungreased 1 1/2-quart casserole dish. Cover; bake 1 hour.

3 cheese baked pasta

•1 pound uncooked pasta
•1 pound ground beef
•1 onion, chopped
•6 1/2 cups tomato pasta sauce
•6 ounces provolone cheese, thinly sliced
•1 1/2 cups sour cream
•6 ounces mozzarella cheese, shredded
•1/2 cup grated Parmesan cheese

Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente. Drain. Meanwhile, cook ground meat and onion in a skillet over medium heat, stirring frequently, until meat is browned. Stir in pasta sauce, reduce heat, and simmer for 15 minutes. Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish. Layer the ingredients in the prepared baking dish as follows: half of the cooked pasta, all the provolone cheese, all the sour cream, half of the sauce mixture, remaining pasta, mozzarella cheese, and remaining sauce mixture. Top with grated Parmesan cheese. Bake in preheated oven for 30 minutes, or until bubbly.

Banana Split Pie

Ingredients:
1 lb pkg Oreos; crushed
1 stick butter, melted
1 16oz pkg cream cheese, softened
1 lb box powdered sugar
1 carton cool whip
1 banana sliced
1 20oz can crushed pineapple, drained
1 can strawberry pie filling

Directions:
Mix oreos and butter, press into bottom of greased 9x13 dish. Mix cream cheese and pdr sugar until smooth, spread over oreos. Then add bananas, pineapple, then layer of strawberry filling. Cover with cool whip and refridgerate!

Chopped Steak

Ingredients:
1lb cubed steak
1 cup flour
salt and pepper
canola oil
Tony Chachere's Creaole Seasoning (or your fav seasoning)
2 eggs

Directions:
Mix flour and seasonings(lots). Beat eggs; cut meat into bite size pieces (needs to be kind of frozen before cutting). Dip in egg, then in flour. Fill skillet with oil (b/w high and med). Drop water in, if it pops-it's ready. Put meat in approx. 5 minutes on each side.

If you ask my husband or my parents what my favorite meal is they all know that it is this with mashed potatoes and baked beans. SO GOOD!!! :)


I got this recipe from Guy Fieri from Food Network. I love that guy!

  • 5-6 small potatoes (Guy used new potatoes & that would be good too)
  • sour cream
  • shredded cheese
  • butter
  • 3-4 slices of bacon, chopped
  • chives
  1. put all ing besides potatoes in large bowl
  2. cube & boil potatoes
  3. drain water from potatoes & place on top of bowl mixture the potatoes will melt all ing then stir
~Basically it is like a baked potatoe but much easier to fix!

American Lasagna

Ingredients:
1lb ground beef
1 6oz can tomato paste
3/4 tsp pepper
8 oz pkg lasagna noodles
mozzarella cheese
2 tsp garlic salt
1 Lg can tomatoes-diced
1/2 tsp oregano
1lb cottage cheese

Directions:
Boil noodles. Brown Beef. Add tomato paste, diced tomatoes, and seasonings to beef. Cover and simmer 20 minutes. Bake in 9x13 baking dish alternating layers of noodles, cottage cheese, mozzarella cheese, and meat sauce. Repeat. bake at 350 for 30 minutes.

Mexican Recipe

  • 3-4 frozen chicken breast into crockpot
  • 1 jar of salsa (I use medium)
  • 1 can of black beans (drained)
  • 1 can of corn (drained)
  • 1 8 oz package cream cheese

cook on low all day then 30 min before you eat put in an 8 oz brick of cream cheese
serve over rice or noodles (I put it on spanish rice)

The next night put it on tortilla shells like a taco & sprinkle with cheese.

Potato Casserole

Ingredients:
2lbs frozen hash browns
2cups american cheese
1/2c melted butter
1 can cream of chicken soup
1tsp salt
1pt sour cream
1/2tsp pepper

Topping:
1/4 c melted butter
2 cups crushed cornflakes

Directions:
Thaw potatoes and mix the first 7 ingredients and put in 9x13 pan. Mix topping and sprinkle on top (put topping in bag to crush and mix). Cook for 1hr or longer at 350. Takes longer if potatoes are frozen.

I got this recipe from my aunt and it is my favorite thing to have during the holidays!!

Easy Meatloaf

Ingredients:
1lb ground beef
1 cup dry oatmeal
1 squirt mustard
1 egg
3 generous squirts ketchup
2 Tbs BBQ sauce
(I usually just eyeball the sauces. I like more ketchup and BBQ sauce in mine)

Directions:
Mix all ingredients with hands. (If too dry add more sauces. Too runny-add more oatmeal). Put in loaf pan. Put more ketchup on top. Bake at 350 for 1hr.

White Cheese Dip

  • 1/2 lb american cheese
  • 1/2 C of whipping cream or half & half
  • small can of jalepeno peppers

-Mix all ing. & melt.

Philly Cheese Steaks


Ingredients:
Roast
1 jar/can water
Mozzerella cheese slices
Hoagie Rolls (I use whole wheat)
Green Beans
Carrots

Directions:
Cook roast all day in crock pot with green beans and carrots. Tear roast and put in rolls. Top with cheese (melt in microwave). Serve with green beans and carrots.

Super easy and super yummy!!

Party Chicken

Ingredients:
4 Chicken breasts
Bacon (I usually leave this out but have had with too)
Dried Beef
8oz sour cream
1 can cream of chicken soup
Tobassco sauce (3 drops or more depending on taste)

Directions:
Put dried beef in bottom of baking dish. Wrap each breast in strip of bacon. Pour soup mix over chicken. Bake at 350 for 1 1/2 hrs covered and 45 min uncovered.
